Two of the main problems with processed foods is 1) the kind of fats they contain; and 2) the additives. This healthylicious mayo avoids both problems — containing fresh and natural ingredients, including the good fats of avocado and olive oil.

Instructions
  1. Gather all ingredients and place in a wide-mouth pint jar in the order given. You may use any ratio of avocado oil to light olive oil to total one cup.
  2. Use an immersion blender and begin blending starting at the very bottom of the jar. Count to 10 or 12 seconds, then move the blender up an inch and blend another 7-8 seconds.
  3. Continue blending and moving up (an inch or less at a time), counting 7-8 seconds at each level, until the blender is close to the top but not flipping mayo everywhere. (Sometimes you'll hear a distinct difference in the blending sound as the mayo at each level is ready; then you can move the blender up.)
  4. Adjust or add any other spices as desired.
  5. Keep refrigerated and use as you would regular mayo.
Recipe Notes

Try experimenting with different spices and even flavored olive oils until you find just the right combination(s) for your palate.

I use this mayo in my Healthylicious Ranch dressing, favorite Chipotle Southwest Dressing, a dressing for Crab Salad, a simple Orange-Mayo dressing, and all by itself in a delicious Chicken Salad. And of course it's a wonderful spread for sandwiches.
