This is an extremely healthful, flavorful and versatile salad. Don’t have one of the ingredients? Leave it out, or substitute something similar. You may experiment and discover a version you like even better, but this is a personal favorite! This recipe is actually a combination of two different wonderful salads shared with me by two different and wonderful friends. The salad gets the limelight with this tasty and light dressing.
Scrumptious Quinoa & Friends Salad
Combine chicken stock and quinoa with a pinch of salt in a medium saucepan. Bring to a boil then simmer for about 20 minutes. Cool and fluff with a fork.
Meanwhile, chop or dice veggies and add all ingredients to salad bowl.
Whisk together all ingredients for Lime-light dressing.
Add cooled quinoa and stir everything together. Dressing may be added to entire salad before serving, even if storing leftovers. (It helps keep the avocados nice and green.)
Bonus: Fresh lime juice is anti-inflammatory.
