Quinoa & Friends Salad
Instructions
  1. Combine chicken stock and quinoa with a pinch of salt in a medium saucepan. Bring to a boil then simmer for about 20 minutes. Cool and fluff with a fork.
  2. Meanwhile, chop or dice veggies and add all ingredients to salad bowl.
  3. Whisk together all ingredients for Lime-light dressing.
  4. Add cooled quinoa and stir everything together. Dressing may be added to entire salad before serving, even if storing leftovers. (It helps keep the avocados nice and green.)
Recipe Notes

Bonus: Fresh lime juice is anti-inflammatory.
